Recipe Instructions

Toast muffins, cook eggs; either "to order" or scrambled-place a slice of Canadian bacon (heat on griddle before adding) on each muffin slice, along with tomato and arugula-top with egg and a slice of cheese. Heat a pan, add oil and diced onions, cook about 5 minutes (be sure to add salt). Next, add the potatoes (diced or thinly sliced) and cook until tender.
