Boil water. Add boiled water to dehydrated potatoes until covered with about 1 inch of water. Set off to the side and re-hydrate potatoes for 15 minutes. They will be a little firm. Drain remaining water and add any preferred spices and cubed cheese. Grease frying pan and heat. Add potatoes and cheese to pan and cook for 3 minutes on each side until golden brown.
