1. Mix the sugar, cinnamon, and chopped dried apples with water.
2. Add cold water to the pancake mix until you get a pourable batter. Mix until most clumps are gone- try not to overmix!
3. Heat and lightly grease the griddle. (You'll know when the pan is ready when a few drops of water skitter on the surface of the griddle).
4. Pour a spoonful of batter per pancake onto the griddle
5. Allow the pancakes to solidify at the edges then add the cinnamon and apples (about 1/2 TBSP per pancake ) and cook both sides until done, or leave the cinnamon apples separate for a topping.
Helpful tip from the chef: Pour 4 in sized pancake batter down, wait till the top starts to bubble on the edges and a bit in the center, then flip.
