Recipe Instructions

Eggs:
Bring a pot of water to a boil, add vinegar, then reduce to a simmer.
Crack egg(s) and carefully drop them into the water.
Let them cook for 5 minutes or until desired consistency is reached.

Toast muffins and cook bacon on griddle. If vegetarian use tofu, or spinach. If vegan make a tofu scramble.

Hollandaise Sauce:
Bring a pot of water to a simmer. Place a heat safe bowl over the pot to make a double boiler. Make sure the bowl isn't touching the water.

Add egg yolks to the bowl and a 2/3 tablespoon of water (per 3 yolks) and lemon juice. Whisk the eggs until they double size over the heat. They will become frothy. Add butter and whisk until the sauce is thick and doubled. It will be hot to the touch and smooth. Add cayenne pepper if desired. Continually stir until finished.
