Recipe Instructions

Pan-fry corn tortillas in a pan with a little bit of oil. Flip throughout cooking to get both sides golden brown. Set tortillas aside once crispy and sprinkle with salt. Melt butter in a pan and scramble eggs. Once eggs are cooked, cover with cheddar and remove from heat. Cover pan with lid for 1 minute to let cheese melt. To serve, put two tortillas in each bowl, cover with cheesy egg scramble, and top with salsa and beans.
