Recipe Instructions

* Pound chicken to boy 1/2" thickness
* Season chicken with salt and pepper
* Heat oil on skillet over medium-low heat or grill until cooked, set aside
* In a skillet with olive oil, add garlic and onion stirring until onions are translucent. Stir in tomatoes and spinach until spinach is wilted
* Add heavy cream, salt and pepper bring to a boil
* Add parmesan cheese, stirring until thickened slightly
* Place chicken back into skillet, spooning sauce on top of chicken
* Serve with pasta or rice
