Recipe Instructions

Instructions:
1. Cook rice in slow cooker, or the night before. (Takes 30 min to make white rice in slow cooker)
2. warm up black, refried, or pinto beans in microwave or on stove with water added so they don't burn, or warm canned beans in slow cooker
3. In fry pan, heat oil and sauté onions (if using). Or just set out fresh (uncooked) red or sweet onions, diced.
4. Beat eggs add to oiled pan & cook stirring regularly until scrambled.
5. Warm tortillas in aluminum foil packets in oven (optional)
6. Top tortillas with optional sour cream, grated or diced cheese, and salsa (set toppings, plus beans, rice, and eggs out in bowls on buffet table).

Substitutions:
- Do not use eggs, cheese, or sour cream for vegans.
- Use gluten free tortillas.
